Today I wanted to show you all how to make these these delicious little tarts. They're in a crispy crust and are filled with custard pudding. Then they're topped with an incredible gelatin mold that's filled with fresh fruit! This is a simple dessert that tastes like it came from a high end bakery, nobody will believe you when you explain how easy they were to make.

Ingredients:
Gelatin:
2 Tbs Gelatin Powder
2 cups boiling water
3/4 cup sugar
1 Tbs Lemon extract

1 Box prepared instant Pudding mix
1 cup chopped fruit of choice
6 Prepared Mini Pie Crusts

Directions:
First start off by boiling the water to prepare the gelatin. Mix the powder into the hot water until dissolved, this could also be heated together in the microwave.
Next add the sugar and extract to the gelatin and mix to dissolve.
Once ready, grease whichever mini molds you will be using with nonstick spray or oil and fill with the the cut pieces of fruit.
Pour the mixture into the molds and refrigerate overnight.
Prepare the pudding mix following the directions in the back of the box and pour the mixture into the pie crusts. Chill these for at least 5 minutes until it firms up then when you're ready to assemble these, Simply take the jello out of the mold and place it on top of the pie.
