This budget was quite a challenge. This is what I am able to make with the food on this $10 budget. Many people will need to add more. To get more calories from the diet you can forgo some of the money spent on vegetables or for more caloric foods like peanut butter, cheese, hot dogs, etc.
BREAKFAST:
Day 1
2 poach-fried eggs on toast
3 Mandarins
Days 2 and 3
1 poach-fried egg sandwich
3 Mandarins
Days 4 to 7
Sausage patty and 1 egg in sandwich
3 mandarins
LUNCH:
Days 1 to 7
1.5 cups rice with scrambled egg, 2/3 tomato, 2 green onions, salt & pepper
Bread
Mandarin (5 days)
DINNER:
2 cups sausage-rice-tomato bowl (recipe below)
Sausage Rice Tomato Bowl with Scallions:
INGREDIENTS
3 3/4 Cups Uncooked White Rice (cook separately)
9 Cups Water
1/2 LB Ground Sausage
6 Ounce Can Tomato Paste
6 Green Onion Stalks
2 Teaspoons Salt
1/2 Teaspoon Pepper
2 Tablespoons Garlic Powder (Optional, only if already on hand)
2 Tablespoons Italian Seasoning (Optional, only if already on hand)
DIRECTIONS
Cook rice separately in large soup pot and drain.
Brown sausage in 1 cup water
Mix in tomato paste
Add in 2 chopped green onion stalk, cooking mixture for 2 minutes
Add mixture to cooked, drained rice in soup pot
Add 8 cups water
Add 2 teaspoons salt
Add 1/2 teaspoon pepper
Add 4 remaining chopped green onion stalks
Cook on medium heat until steaming
