Beef Calereta consider as the Philippines most famous beef stew and a popular dish served during special occasions and gatherings. Since yuletide season is just around the corner. This is the perfect time to share my recipe of this beefy, cheesy, caldereta. The recipe itself is simple, though it might require a bit longer cooking time until the meat becomes really tender and soft to bite but I assure you it is really worth the wait. Ingredients:
1 kilo beef brisket, cubed
6 cloves garlic, minced
1 large onion, sliced
3 cups water
1 piece beef broth cube
1 pack 200 grams tomato sauce
2 tablespoon annatto seeds soaked in 1/2 cup hot water (optional)
1 small can liver spread
2 small packs eden cheese, cubed
2 tablespoon peanut butter
2 large potatoes, sliced
1 medium carrot, sliced
Fish sauce and pepper powder according to your preference.
Cooking time:
2-3 hours but you can use pressure cooker to save you tons of time and help cook the meat faster. This serves 8-10 person
