DON'T JUST FRY THE EGGPLANT, DO THIS, FOR SURE YOU WILL LOVE IT! Fried eggplant is always delicious and tasty, but cooking it with ground pork is tastier and satisfying! Enjoy and serve it with freshly steamed rice.

Ingredients:
450g eggplant
1cup cornstarch (to coat the eggplant)
5 cloves garlic
1 medium-sized onion
450g ground pork
1/2 cup soy sauce
1/2 tsp ground pepper
1 tbsp brown sugar
30g oyster sauce
1/4 cup water
1/4 cup vinegar
cornstarch slurry (1 tbsp cornstarch + 2 tbsp water)
150 g red bell pepper
1 tsp sesame oil
spring onion for toppings
