Ingredients:
450g eggplant
1cup cornstarch (to coat the eggplant)
5 cloves garlic
1 medium-sized onion
450g ground pork
1/2 cup soy sauce
1/2 tsp ground pepper
1 tbsp brown sugar
30g oyster sauce
1/4 cup water
1/4 cup vinegar
cornstarch slurry (1 tbsp cornstarch + 2 tbsp water)
150 g red bell pepper
1 tsp sesame oil
spring onion for toppings
